Dzienne zapotrzebowanie zdrowej, dorosłej osoby na karnitynę wynosi średnio 15 mg. Synteza wynosi 11–34 mg karnityny dziennie, a z dietą dostarczane jest codziennie średnio 20–200 mg. U wegetarian ilość karnityny w pożywieniu jest dużo mniejsza i wynosi ok. 1 mg/dzień

Karnozyna
Researchers in Britain,[2] South Korea,[3] Russia[4][5] and other countries[6][7] have shown that carnosine has a number of antioxidant properties that may be beneficial. Carnosine has been proven to scavenge reactive oxygen species (ROS) as well as alpha-beta unsaturated aldehydes formed from peroxidation of cell membrane fatty acids during oxidative stress.
Carnosine can oppose glycation[8][9] and it can chelate divalent metal ions. Chronic glycolysis is suspected to accelerate aging.[10] Carnosine was found to inhibit diabetic nephropathy by protecting the podocytes and mesangial cells.[11] Because of its antioxidant, antiglycator and metal chelator properties, carnosine supplements have been proposed as a general anti-aging therapy.[12] Carnosine containing products are also used in topical preparations to reduce wrinkles on the skin.[13]
Typical vegetarian diets are thought to be lacking in carnosine, but whether this has a detrimental effect on vegetarians is unknown

A study involving, 18 vegetarians and 24 non-vegetarians, on the effect of creatine in vegetarians showed that total creatine was significantly lower than in non-vegetarians. Since vegetables do not represent the primary source of creatine, vegetarians can be expected to show lower levels of directly derived muscle creatine.

Taurine is conjugated via its amino terminal group with chenodeoxycholic acid and cholic acid to form the bile salts sodium taurochenodeoxycholate and sodium taurocholate. The low pKa[12] of taurine's sulfonic acid group ensures this moiety is negatively charged in the pH ranges normally found in the intestinal tract and, thus, improves the surfactant properties of the cholic acid conjugate. Taurine crosses the blood-brain barrier[13][14][15] and has been implicated in a wide array of physiological phenomena including inhibitory neurotransmission,[16] long-term potentiation in the striatum/hippocampus,[17] membrane stabilization,[18] feedback inhibition of neutrophil/macrophage respiratory burst, adipose tissue regulation and possible prevention of obesity,[19][20] calcium homeostasis,[21] recovery from osmotic shock,[22] protection against glutamate excitotoxicity[23] and prevention of epileptic seizures.[24] It also acts as an antioxidant and protects against toxicity of various substances (such as lead and cadmium).[25][26][27][28]
